        <p>I ate leftovers of last nights spaghetti and &quot;meat&quot; balls today for lunch and when I got home from work I was pretty hungry, but pretty tired. In addition, my fridge and larder are pretty empty because I just got back from some travel and am leaving for another almost week-long trip on Thursday...so I&#39;ve avoided going grocery shopping and buying things, especially perishables.<div><br /></div><div>So, what makes a quick dinner when you&#39;re a) lazy and b) lacking in a lot of fresh ingredients?</div><div><br /></div><div>Why today&#39;s Lazy Vegan recipe:</div><div><br /></div><div>Black Bean &amp; Corn Salad</div><div><br /></div><div>Mix in a bowl:</div><div>1 can corn kernels</div><div>1 can black beans</div><div>1 mini-can of diced chiles</div><div>2 diced organic tomatoes (Yes, I actually had *canned* diced tomatoes in the house, but I also had a couple of fresh ones that are approaching their &quot;expiration date&quot;, so I did indeed slice them up, yay me!)</div><div>Salt</div><div>A spoonful of Nayonaise (You could use use a little olive oil if you preferred)</div><div><br /></div><div>And that, in all its canned glory, was my dinner on Vegan MoFo Day 6!</div></p>   <p style="clear:both;">

 <div>Today was deadline day for voter registration and I have to tell you, I am amazed at the types of conversations you have with people who have decided they don&#39;t need to vote. <br /><br />I just wonder, with times as they are, how anyone can offer these pearls of wisdom: <br /><br />* I always get called for jury duty. I hate that. <br />* My vote is not really going to count.<br />* These things are rigged, don&#39;t you know that?<br />* I&#39;d rather sit this one out. <br /><br />I&#39;ll tell you something that may shock you...I don&#39;t have a lot of patience for bullshit. And those excuses? Rife with shittery. And I believe these excuses should be met with a curse. (See curses in red)<br /><br />Getting called for jury duty is sometimes a hassle and inconvenient...but need I remind you of the importance of a fair and impartial jury? If you don&#39;t vote for this reason, <span style="color: #ff0000"><em>may you one day have a jury of sarah palin&#39;s judging your guilt or innocence. For...whatever...karmic case...you may be...punished with.</em></span><br /><br />Saying your vote is not going to count is the lazy conspiracy theory lovers way out. Hell, you don&#39;t even need to actually have a conspiracy theory. Just glance about furtively and speak in a whisper. <span style="color: #ff0000"><em>May your name one day turn up in a very public and embarrassing news story that is patently false.</em></span> The only reason your vote doesn&#39;t count is because you were too lazy/disillusioned/misguided/ignorant to cast one. And yes. I said ignorant. In this country, where we have incredible access to free information and resources...I don&#39;t want to hear about how people just don&#39;t know how to do it. If you can dress up your damned myspace page with glitter, unicorns, music videos or spinning strippers with big boobies, you can register. Period. <br /><br />To the folks who talk to me about votes being rigged, everyone knows votes casted aren&#39;t coun...well, okay. You might have a point. But that still is not enough of a reason to not vote. It&#39;s just a reason to get more involved. <span style="color: #ff0000"><em>May you get pulled over for a traffic offense, but later have it pardoned. (Because your complaint is sorta valid)</em></span><br /><br />As for sitting this one out...I&#39;m wondering what you might we waiting on? The sky to fall? The world as you know it to erode? <span style="color: #ff0000"><em>May you suffer from irritable bowel syndrome in the line of a nasty restroom.<br /></em></span><br />*exhales*<br /><br />Okay.  <div>Tonight I&#39;m playing with the sexiest cocoa absolute I&#39;ve ever encountered. I got it from <a href="http://www.edenbotanicals.com">Eden Botanicals</a>. It&#39;s not cloying like some cocoa absolutes. This is chocolate-y, but smokey at the same time. <br /><br />I&#39;m trying it out with a little vanuatu sandalwood, pink lotus absolute, orange and white cognac essential oils. May toss in some tuberose absolute and ginger lily. Trying to decide which jasmine to test with this also(india or sambac).<br /></div>   <p style="clear:both;">

        <p>Today I didn&#39;t feel much like cooking, but I also didn&#39;t feel much like going hungry. So I made one of my standbys: Spaghetti and Meatballs. I like to combine prepared foods with just enough fresh to make me feel healthy, so try not to be too impressed with the recipe ;)<div><br /></div><div>Saute in a pan with Olive Oil:</div><div>Minced Garlic and Basil (I use the kind that come in frozen cubes at Trader Joe&#39;s)</div><div>1 diced organic leek</div><div>2 diced organic tomatoes (It&#39;s fun to use different colors too)</div><div>5 diced stalks of organic celery</div><div><br /></div><div>Add spinach leaves and corn kernels (I&#39;ve used fresh, but tonight I microwaved some frozen for a couple of minutes and the tossed them in)</div><div><br /></div><div>Add spaghetti sauce of your choice (and if you prefer to sauce it up yourself, fell free)</div><div><br /></div><div>Once the sauce simmering, add in Trader Joe&#39;s Meatless Meatballs.&#160;</div><div><br /></div><div>Once the Meatballs are in, start boiling the water for the pasta (the Meatballs take about 10 minutes simmering to be ready.)</div><div><br /></div><div>Right before you&#39;re ready to drain the pasta, add some nutritional yeast to your sauce and mix it in well. You can also top it al with vegan parmesan. Tonight I was decadent and did both :)</div><div><br /></div><div>You&#39;ll notice I&#39;m not a huge fan of measuring too.&#160;</div><div><br /></div><div>This is why I&#39;m not a food blogger. but in honor of Vegan MoFo this IS what I ate for dinner tonight :)</div></p>   <p style="clear:both;">

<p>If you have not picked it up to read. You should. It is about &quot;Newman&#39;s Own&quot; and also &quot;Hole in the Wall&quot; camp that Newman &amp; Hotchner both started. It is inspirational, funny and just a great quick read about what good you can do in the world especially if do not play by the rules and go against all the naysayers. Of course, this book is just validating my endless love for Paul Newman (rest in peace).</p>
<p>On Thursday, I went to watch the debates on Sunset at Isla Cantina. I am not much for the scene that is Sunset Blvd but it was a pretty fun night with Tall Guy, B, Blades and Mellemusic. We had a good time playing Palin Bingo.</p>

<p>I will admit it was not as painful as I had envisioned but the winking, the &quot;new-clurrrr&quot;, the constant reference to &quot;mavericks&quot; and the endless spouting of catch words and the use of &quot;gosh darn&quot; &quot;heckuva&quot; etc. pretty much made me want to puke.&#160;Luckily, my Vox neighbors are pretty funny so read their comments <a href="http://ambookgeek.vox.com/library/post/on-words.html">here</a>, <a href="http://dewitte.vox.com/library/post/maverick.html">here</a>, and <a href="http://redzilla.vox.com/library/post/drink-me-under-the-table.html">here</a>. How anyone is still interested in voting for her is really beyond me.&#160;</p>
<p>The crowd was pretty eclectic&#160;and diverse at Isla Cantina so&#160;we had a very&#160;lively bunch.&#160;Not&#160;so sure if there were any&#160;Republicans in the bunch...in the end, the person who organized it&#160;opened up the bar for&#160;20 minutes which&#160;was nice:) FREE BEER!&#160;then they had the Don Julio tequila ladies passing out samples of Don Julio.&#160;Thank goodness I was not playing a drinking game! I probably would have passed out right there.</p>
<p>Also, I&#39;m getting back into baking mode for the holiday season and book clubs so we were talking about nuts in baked goods. I like nuts in baked goods. People feel really strongly about having nuts in baked goods which always gets me cracking up.</p>
<p>Oh, and today, I had a very cool librarian search moment. A patron came up and asked, &quot;Um, I don&#39;t know the title of the book but it&#39;s about boy who plays this game and it affects the earth but it ends up not being a game. It&#39;s real.&quot; No title, no author, nothing! Then she asked, &quot;are there many books with the letter &quot;E&quot; beginning in the title?&quot; Honestly, I held back the snark there because she was frustrating me. Anyway, I tried a combination of subject searches and then Orson Card&#39;s &quot;Ender&#39;s Game&quot; came up and she freaked out. So yay..score one for cataloging skills! </p>
